Yang Chow Fried Rice is the perfect use for day-old rice. Chock full of sausage, shrimp, green peas, eggs, and green onions, it's a delicious one-pot meal!


Ingredients:

4 cups cold day-old rice
2 tablespoons oil (or 1/2 Cup Dairy Creame Margarine or Butter Cup Milk Margarine)
1 small onion, peeled and chopped
2 cloves garlic, peeled and minced
1/2 pound (about 5 to 6 pieces) Chinese sausages, diced
1/4 pound shrimp, peeled and deveined
1 cup frozen sweet peas, thawed
2 tablespoons soy sauce
¼ cup green onions, chopped
salt and pepper to taste
2 eggs, lightly beaten
2 Cups of Chicken Stock (Made from 2 Cubes of Knorr Chicken Broth)

Things To Do:

- In a bowl, break cold cooked rice to separate grains.
- Heat wok or wide pan over high heat. When the pan is very hot, add 1 tablespoon of the oil and swirl around the bottom of the pan to coat. Heat oil until shimmering.
- Add onions and garlic and cook until softened. 
 - Add sausages and cook for about 2 to 3 minutes or until heated through.
- Add shrimp and cook until color changes to pink. 
- Add green peas and cook until heated through. Remove the mixture from the pan and keep warm.
- In the pan, add the remaining 1 tablespoon oil and heat until almost smoking. 
- Add rice and cook, spreading the rice on the entire cooking surface of the pan, for about 45 seconds or until grains start to sizzle and then toss to redistribute. Repeat a few times until rice is heated through.
- Pour in the Chicken Broth Stock.  
- Add sausage and shrimp mixture, soy sauce, and green onions. Toss gently to combine. 
- Make a large well in the middle of rice and add the eggs. Allow the eggs to set for about 30-40 seconds and then break into pieces with back of the spoon. 
- Season with salt to taste and generously with pepper.
- Continue to cook for about 1 to 2 minutes and then stir into the rice. Serve hot.

"Manager Mu we need a replacement as soon as possible. The kitchen is already overworked as it is." The head chef protests.

Manager Mu lets out a large sigh and turns to LiXue. "I believe that LiXue can be that replacement." Manager Mu states which puts all eyes on her.

"Can she even handle been in the kitchen? Her arms are so thin." The chef spat.

Though that comment stings as her pride as a chef, as usual she isn't a person who will meekly back down. "How about this? I prepare dishes from the ingredients that you select and if I don't succeed then I won't step into your kitchen again." LiXue challenged looking the chef in the eyes.

The head chef stares at the menu, "Make me a dish using these items. River bass, crab and shrimp." He mocks staring at her.

LiXue went to her station pulling her hair into a ponytail and securing her sleeves up to her elbows.

Seafood such as crab and shrimp was a fairly difficult commodity to store before the invention of refrigeration and only restaurants near port could have access to fresh fish. So having seafood available inland was considered a luxury to cook with and many chef are intimidated by such ingredients.

LiXue began with a previously prepared chicken stock soup base as brought it to a boil, then reducing the soup base to thicken it.

While the soup was reducing, she placed the crabs into a steamer basket until they turned into a blistering red colour.

LiXue sliced the mushrooms, bamboo shoots and ginger and three them into the pot and infuse their flavours. While the ingredients were infusing, she seperate the crab meat from it exoskeleton and shredding it. Adding Chinese rice wine and dark soy sauce and seasoned with salt.

It was too hot to serve right now, so she began on her next dish. Grabbing the river bass from the side, LiXue flew toward her trusty knife. It's blade cleanly sliced through the flesh, filleted the fish until the tail removing the spine.

Opening the fish like a book, LiXue made diamond crosshatches across the flesh without cutting to the skin. 

Salt and sugar peppered the fish and covered with egg yolk setting it aside to rest. Oil was quite expensive, so she could only use a limited amount but it was enough for the fish at least. Then battered it with flour and submerged into the oil. The sound of sizzling made the crowd watch in anticipation, as she took it out half cooked blasting the wok with heat. And frying it yet again.

It came out crispy and golden glistening like edible gold, as the oil dripped from the fish. It made the people watch salivate at the sight, as they could only imagine the taste of it.  But LiXue blocked their sight of the dish and poured a fragrant sweet sauce that had a tangy note. The fried fish was amber in colour, which only served to entice the onlookers more.

Lastly the shrimp. Placing the shrimp into a bowl, as she poured a portion of the marinade over it made from garlic, ginger, red pepper, oil, honey and soy sauce. 

To a roaring fire and a sizzling pan, LiXue poured oil onto the pan. Adding the marinated shrimp, she added the remaining marinade to infuse the flavour. She then removed the shrimps and let the marinade reduce and poured it over the shrimps. 

The sight and smells of the dishes were familiar and ordinary but also something that seemed quite extravagant. 

The head chef stared at the dishes nonchalantly and his chopstick went for the sweet and sour mandarin fish. The fried fish was crispy on the outside and tender on the inside the sauce was a perfect balance of sweet and sour, as the flavour danced on his tongue. A blush of satisfaction lit onto his face, but it was quick to disappear after her recomposes himself.

It was the shrimp's turn. The flavours were bursting at the seams when the shrimps met his tongue like a violent tsunami. 

He stared at the braised crab meat soup with wariness, as the spoon came closer and closer to his lips. His eyes widened in surprise. It wasn't a shock of flavour like the previous two dishes. It was gentle and warm it almost reminded him of his hometown. 

He sat in his chair in silent contemplating. Then a satisfied smile made its way onto his face, "Congratulations LiXue. You start cooking tomorrow." the head chef declared.

LiXue smiles and the crowd cheers for her. As she was heading to her room which she shared with DanJing, a charging force slammed into her back which sent the breath within her to escape. "DanJing that was dangerous. I could have fallen and injured myself before my first day as a chef." LiXue scolded.

But DanJing gave her cheeky grin, "Boo, but look what I got here." DanJing said. As a small jar of wine was pulled out from her jacket, "Let's celebrate your promotion!" DanJing cheered.

LiXue decided to join DanJing, as they drank the night away letting out drunken slurs. DanJing was half asleep while shaking the empty jar to retrieve any drops, but LiXue smiles softly with a drunken blush on her face. Hiccups erupted from LiXue, it was a definite sign she was tipsy.

'That was some strong liquor' though LiXue.

LiXue shook the sleeping DanJing. "L- *hic*-et's head *hic* ba-*hic*-ck to bed *hic*." LiXue hiccups throughout her sentences, as she slings the flat out drunk DanJing to their shared bedroom.

LiXue and DanJing wake up the next morning. LiXue is fine, but DanJing it suffering from the after effect of alcohol. 

It was fairly early in the morning almost dawn. Until another girl came into their room, "LiXue, Head Chef wants you to pick up the ingredients for today." The girl instructed handing her a bag of coins and a list of ingredients.

LiXue waved DanJing goodbye on the way out, as she headed to the morning market. Despite it being so early, the market was busy and loud. LiXue knee that she couldn't waste time in the market though she could come during her days off.

Heading to the vendor that sold ingredients she need and haggling the price to a more affordable price. Her hands were full with ingredients, as she was making her way down the the restaurant. Someone bumped into her almost making her drop the ingredients, as one cabbage rolled away from her. 

It bumped near the foot of a hooded figure. They picked it up and stared at her for an uncomfortable amount of time, almost hesitantly places the cabbage into its rightful place. She gives them a nod in thank and walked away.

As LiXue turned the corner, she could still she the person from the corner of her eye still staring at her direction.

Chiba LiXue was a woman who fell into a time slip most likely.  Most likely  the whims of a bored god. She was forced into one of Japan’s most violent times, the Sengoku period. All she can do is survive.

Daniel pondered upon it thoroughly as he didn't expect for this to happen. At first, he only thought that it was just a simple case of jealousy over Trident's success that's why Sung Nan did what he did. 

But because of what that man wrote on that piece of paper, his thoughts had run wild. 'Who is behind this? And most importantly, why was this person after Samantha? Has she offended someone?', with all these questions in mind, all he hoped was that this would be the last of it.

Although this issue about Trident's game being stolen is an act of crime, it is only about business and it can still be replaced if it so happened that they weren't able to solve the problem. For Daniel, Samantha wasn't physically harmed and that's what's most important. He sincerely hoped that whoever that person was wouldn't go as far as to inflict harm against his woman. At The Western Shrimp Restaurant

Because of Samantha's identity and the recent happening, it's quite inconvenient and uncomfortable for them to stay where the common customers dine. Especially when she and Daniel go out, they have to be careful as to not attract or draw attention to themselves. 

Hannah and Samantha were inside a private dining room and their table was full of different kinds of seafood. There were shrimps, crabs, lobsters, squids, and fish dishes.

The two of them sat across each other and had already started eating while waiting for Daniel who was still at a meeting. He had texted earlier and told Samantha to eat first as he was running late.

Samantha laughed at the sight of her best friend who had sauce around her mouth from eating chili garlic shrimp. "Yeah, you sure look like someone who doesn't want to do that. And it's not a date night, we just wanted to eat out because I was craving for some seafood.", she replied as she handed her best friend a table napkin. "Wipe your mouth. Can't you eat more umm... ladylike?"

"Pff! What ladylike? I'm a lady and this is what I'm like!", taking the napkin from Samantha, she hastily wiped her mouth and continued to eat the shrimps with her bare hands. "How am I supposed to eat this dish then? It's very saucy and I have to use my hands to properly shell it. How else can I enjoy the food?"

Samantha shrugged, "Well, what if someone sees you like this? It's okay to use your hands, but at least don't make too much mess. You won't know who you're going to run into."

Hannah reached for the spicy crab and transferred it to her plate, "Oh please, I don't think Daniel Cho is going to mind how I look when he sees me eating like this. Besides, who am I going to run into? We're in a private room!"

Samantha chuckled, "Suit yourself. Don't say I didn't warn you.", she mumbled.

"Just eat! Here, try this one, and dip it in soy sauce.", Hannah pointed at the dish on Samantha's right before she held the crab with her hands and sucked the sauce and meat out of it.

The door opened and in came the handsome Daniel Cho.

"Hey, honey! We couldn't wait, we were already very hungry.", Samantha explained as Daniel kissed her on the cheek.

He took off his coat and sat beside her, "It's okay, sorry the meeting was too long."

But wait, Daniel wasn't alone. Just a few seconds after he came inside, a tall fellow stepped in the room after him.

He was also wearing a business suit and he stopped by the door as he scanned the room. Daniel had called him an hour ago and told him that he and Samantha wanted to have dinner with him at some restaurant.

Samantha waved the man over, "Joon! Come in. Join us and have a seat next to Hannah."

Hannah was too busy enjoying her crab to notice her boyfriend by the door. But as soon as she heard Samantha called his name, her eyes widened in surprise, she had just realized the presence of a man not far from her. 

Holding the crab with her bare hands, she was still sucking the meat out when she turned to the side and met Seo Joon's stare.

Seo Joon tilted his head, seemingly confused by the sight of his girlfriend with a crab in her mouth in front of him. 

Out of shock, Hannah dropped the crab onto her plate causing a sound.

*clank*

With sauce all over her mouth and messy hands, she called, "Joon."
