As long as you are able to make Mesmer reach his second transformation after reducing his health to half, he starts over relying on his snake, while it can do much damage if it hits you as long as you can avoid it and go in for a strike you should be able to take him on. It will take a couple of tries to get used to him but he’s like any other souls game boss.

No he is way older if you count from the creation then the early days of aman to the years of the sun then later to the years of the trees which ended with morgoth coming to middle earth after was the 1st, 2nd and 3rd age to Sauron’s defeat. Don’t forget the year of the trees alone was 14,325 years. So yeah he is close or more than 50,000 yrs.
