I say do a poly with Cati and vi with the mc personality he will play off both of them well plus I also think you can a cool story arc were in the 7 year timeskip you can have him with Cati so it feels like he spent time with both to develop them feelings but just my opinion.
Will there be romance? Not yet. MC is more treating it as live fanservice right now. There may be crushes, sure. But most likely little true romance until end of Act 1/start of Act 2 timeline, if we reach that point.
