Lava produces a lot of chemical fumes, so I'm assuming the idea is that she concentrates those fumes into an acid.
Mei used it in the form of acid that melted Madara's wood-style jutsu. Using it this way, the jutsu is faster and its range is bigger than using it in the form of lava but the firepower of the jutsu decreases.
