if I'm not wrong, it wasn't that no body knew of it, rather the information was just suppressed. Learning from other bending styles usually required one to observe and study other bending styles. and while finding scrolls and such for training might have been easy for nations and cities with decent spies, training in other bending styles would take alot of time and effort, especially bending styles that are opposite in nature, and some people may even be negatively judged by others for trying. And even tho there were those who successfully trained in other styles, the avatar world still went my master apprentice learning style. So not learning other styles to incorporate into your own style was bc of inconvenience, negative environments and lack of teaching. Iroh's use of water bending to redirect lighting wasn't necessarily a country secret of anything btw
