Hisoka wants to achieve things on his own. It's like a personal satisfaction sort of thing. It was his job for almost his entire life and he's grown attached to it. He feels there's a way to do things. As sniper once said: "Professionals have standards."

Personally I think the reason he’s so paranoid and on edge is because of the betrayal he suffered in his original life
He could turn invisible but he doesn't really care. They could see him and there isn't much they could do to actually harm Hisoka. He knows when he needs to be cautious and when he doesn't.
