The next day
Hiro was sitting in a classroom with an amused smile. He got the class with Erina in it, how nostalgic. He yawned and said "Alright, who's first?" all the other kids started cooking and brought their dishes to Hiro one by one, he made them make a snack dish, something that can be eaten on the go.
He had a bunch of little snack type dishes, they were okay. If he was being honest he wasn't expecting much from them anyway, it was quite a hard task.
They had to come up with a gourmet snack, basically.
That in itself was a hard task, but they were under pressure from Hiro to make it taste good or they were gonezo.
That made it almost impossible to do!
It's make or break time baby woo!
Hiro graded them with numbers this time, 8 was a pass, everything under was a failure.
So far there were only three 8 point grades and they were really bottom of the barrel, scraping.
Then finally, Erina brought her plate over.
She had a bit of a haughty expression, making Hiro chuckle at her. He stared at her in amusement, that haughty look reminded him of Mana. While he was staring at her, she felt a bit unsettled and cleared her throat saying "Endive boats with sesame seed tuna tartar."
Hiro tilted his head and looked at the little 'boats', basically they were made with an Endive leaf and the stuffing was places in the cradle of the leaf. It was a fancy snack for elegant parties and extremely high class people.
Basically, they serve these at Oscar Parties for the actors and shit.
Hiro picked up and Endive boat and ate the whole thing in one go. He chewed and looked thoughtful, it was an elegant ballroom dance in his mouth! What a flavor! It was incredible! he closed his eyes and fell silent, but he stuffed the other Endive boats in his mouth, he had never tasted these before. It was really good!
Erina's haughty look returned and Hiro opened his eyes, the first thing he saw was the haughty little girl. He chuckled inwardly and cleared his throat, ready to fuck with her, he got serious and said "In terms of food, it's very food. The Tuna tartar was seasoned properly and the Endives were cleaned thoroughly, at least I don't have to worry about getting a disease eating it. The combination along with your own twist with the lemon juices and cilantro was very nice and moved the dish to an even higher height."
He smirked and continued "That's why, I'm giving you a 9." Erina frowned and Hiro explained "A 9 because I said specifically snack food. This is a snack but who the fuck can afford this? I put this in my restaurant I think I have to charge 40$? Maybe more? Snacks come from street vendors, too much elegance will make the common people avoid it even if it's super cheap, plus the look and ingredients are above and beyond what a snack was meant to be."
He tilted his head from side to side before adding "Though, your dish is most certainly a snack, it clearly displays your background and elegance. It is a very beautiful dish and very tasty, I like it a lot but the target customers are all high end and fancy people... Which in itself, isn't a problem. You appeal to whoever you want, if this was in a high class, super fancy, penthouse restaurant, I think you'd make upwards of 2000$ every night with just this appetizer alone."
He tapped the empty plate with a teasing look in his eyes as he continued "I'm not saying you're wrong. I'm taking away a perfect score from you because your eyes are too high and your vision is too narrow. What's the point of being a chef?" Erina was stunned, who had ever talked to her like this? Hiro earnestly waited for her opinion.
Erina hesitated for a moment before saying "Feeding the hungry?" Hiro blinked, he did not expect that. He was stunned for a moment before blinking and saying "Yeah! Wow, I didn't expect that from your mouth. There's a time and place for fancy dishes, the meaning of a chef is to feed the hungry and make people happy. In addition, we, as chefs, have to make money to survive. Making money from cooking isn't embarrassing or bad, the world revolves around money some people only have hope in their cooking to support their families."
He paused for a second before continuing "Let's look at it subjectively, a chef needs money to survive. What's the best strategy for me?" Erina said "Open a restaurant?" Hiro smiled and said "What kind of restaurant? Cheap foods? Diner? High class? Expensive foods? Exotic? French? Italian? Patisserie?" Erina was overwhelmed and Hiro added "The problem isn't any of these things, the solution doesn't have to be opening a restaurant. First of all, most people can't afford to buy a restaurant."
He smiled softly and taught her "Stalls, booths, carts, etc. All the people cooking at these places are trying to make money too. Let's go back to your dish, if you were poor and needed money to support your family, would you sell this?" Erina was stumped and retorted "But I'm not poor." Hiro shook his head and said "It doesn't matter, if you open a restaurant the way you are now you will make less money than someone else."
Erina was stunned and said "Why?" Hiro said with a calm smile "It's very simple. Your target audience is not as big as other people. The range of customers who can even afford your dish will be very small, sure you'll make a lot of money per customer but the same chef at a regular restaurant will get 3 Michelin stars, a 5 star rating, and double your earnings in a year."
He pressed out on a finger and added "Affordability is a big deal and could make or break a restaurant." he pressed on a second finger and continued "Accessibility is also a hug factor for customers, if your restaurant is too out of the way or a hassle to get to, they will just go somewhere else. Even if the chef who owns the restaurant is labeled by the world as the God of Cooking."
He pressed on a third finger and said "Finally, Appearance. This is even more important, the restaurant can't make your customers feel pressured or inferior. The sentence the Customer is god isn't a joke. While, you don't have to listen to their requests and cater to them, you absolutely must make sure that they are comfortable in your restaurant."
He looked at Erina and continued "It's very simple psychology. If you went somewhere where you felt inferior and small, unworthy of being where you were, would you come back? Or hell, would you even stay?"
Erina was speechless and Hiro answered for her "No, you wouldn't. Your brain will subconsciously avoid places where it's uncomfortable, this is the property of the brain. Think of it like this, a couple is talking about where to eat, the first time they decide to go to your restaurant. They come and immediately have the psychological inferiority of being somewhere they don't belong. Nevertheless, not wanting to waste their night, they eat the food. They love the food! Very delicious!"
He smiled lightly and continued "The next time they talk about a place to go, they won't even mention your restaurant. It won't even cross their minds, as if they had forgotten how good the food tasted. This is because the invisible mental stress on the common man in a place he doesn't belong is too great, his brain will cancel out that place and label it as a 'danger zone' even if it's completely safe and the food was good. Do you understand what I'm saying?"
Erina blinked and nodded, Hiro smiled happily and said "9 because it's too elegant and I'll take 1 more point off so you don't get too cocky, making your final score an 8. Congratulations!" He got up and stretched before saying "See you all tomorrow morning!" before walking out, leaving the class and Erina stunned silly.
Erina was stunned silent from her 8 score.
-1 point so she doesn't get cocky...
She came back and stomped her foot in anger, roaring in her heart 'AHHHHHHHHH I'LL KILL HIM!'
