galleons are around in lore it's just that the ironborn prefer long ships for its speed with more room for oarsmen and loot
some do, but as for recruiting the night, lords had one of if not the most stable gene seed, so most were compatible it was more so about mind set that set the recruits apart
not likely since most planets in the ghoul stars are night worlds or dead ones, making it near uninhabitable for most humans without proper mutations like the nostramans.
