A reddish-orange soup that is creamy like a cream soup but isn't actually made using cream or milk. Instead, as often seen in other Chinese dishes, a starch slurry is used to thicken the soup and give it a shiny gloss at the end. A slurry is a mixture of the starch, often potato, and water mixed together to form a white sticky liquid.
In all likelihood, the addition of mashed up potatoes was to substitute the use of starch in this recipe.

Once the soup starts boiling, add in the starch slurry and drop in a mixed egg. Vinegar, pepper oil and sesame oil is added right before serving.
