They are at level 100, and still need the same amount of XP as any normal player to level up. By killing powerful summons, they are able to level up. Right now you can picture them as someone at level 50, but need the same XP as someone at level 1 to level up. Just because they are overpowered doesn't mean the XP that is needed is increased. They can pick up new job classes, and since things are now a reality, they could pick up cooking classes if they want... but I will go over the whole job classes later in the story.
