From sun up to sun down, and they would go to bed before it was dark, put in roughly 2 hours for breaks and meals, and you have about 8 hours of work at that time, it was only when lighting became more common that working longer than the sun lasted became prevalent, the reason work was horrible wasn't the working hours just the living and working condition's in general people generally lived in what is equivalent to a latrine in today's standards.

Let me just point out the obvious here for the people calling Sam stupid, Sam is not the Intimidation target nor the thing that the douchebag wants to hurt and get he's just a tool for him to get the girl, they barely talk to each other and know each other, people don't normally suspect people you never talk to, Yuna on the other hand knows the imbecile's personality and what kind of thing he may do, but most people in a normal working environment don't normally hire thugs to beat their coworker's so there's little reason for Sam or Yuna to suspect him.
