Because it's hard to write. Can you even begin to fathom how hard it is to write a good story when the MC has full irl knowledge of the setting? You not only have to make them fit somehow while they know that they don't. but also plan everything they do with the idea that they can't tell anyone they aren't originally from that world. By giving a perfectly good reason why the don't remember the setting everything becomes so much more organic, natural.
'I have this nagging feeling that giving away my knowledge on this universe is going to come back to bite me in the ass. I already regret doing it since I have no idea what is and isn't normal. What did he say again, a year until I am forced to go somewhere else?' I pecked my memory about it but beyond the timeframe the rest was missing like my memory had burnt out holes in it.

Alexander was a fairly normal guy on earth or at least he hoped so. Somehow though he had gone his entire life without playing a single pokemon game or watching any of the anime. He also bought a cheap ds lite to play all of them when he was off work. Unfortunately he was struck by lightning the moment he finished the last of them and died. He ended up awakening in a small cave at the foot of a mountain forest and learned he had a system to help him in this new and very dangerous world.
