I think it's pretty obvious, Kenshin can see and manipulate souls, Ei can't. Both are Planes, and yet, only one of them can alter it at will. Ei's is what it is, nothing she can do. The other is like a ballon, if you pull the rubber strongly enough, it starts to turn transparent, which only someone with the ability to manipulate souls can do, hence, the difference.
Just like Ei could 'abduct' people inside the Plane of Euthymia to make sashimi, Kenshin could do something similar, but instead of fighting, he 'projected' his soul over his eyes and made the Plane invisible.
